Ikkaku Yakiniku is a premium Japanese-style yakiniku restaurant located in Sunnybank, Brisbane.
We operate as a formal dine-in restaurant specialising in premium grilled meats, authentic Japanese cuisine and full-service restaurant dining.
Our venue offers approximately 70 seats, table-side grilling facilities, booth seating and a modern restaurant layout designed to provide customers with a high-quality dining experience.
Following the upgrade and expansion of our premises, our restaurant now operates with an enhanced dining area, improved service capacity and upgraded commercial kitchen facilities. Our menu requires consistent food preparation, careful control of premium ingredients, Japanese cooking knowledge, quality control and coordination between kitchen and front-of-house operations. We are seeking a qualified and experienced Chef to join our team on a full-time ongoing basis.
About the role : Full-time chef
The Chef will be responsible for planning, organising and participating in the preparation and cooking of food for our Japanese yakiniku restaurant. This is a hands-on Chef role in a formal dine-in restaurant and commercial kitchen environment. The successful applicant will assist with maintaining high standards of food quality, presentation, kitchen efficiency, hygiene and customer satisfaction.
Key duties and responsibilities :
- Plan, develop and refine Japanese yakiniku and related menu items, including grilled meats, hot dishes, side dishes, sauces, marinades and seasonal specials.
- Plan and organise the preparation and cooking of food for lunch, dinner and busy restaurant service periods.
- Prepare, season and cook a range of Japanese and yakiniku dishes using appropriate cooking techniques, including grilling, pan cooking, simmering, marinating and preparation of sauces and accompaniments.
- Select, handle and prepare premium ingredients, including meat, seafood, vegetables and Japanese pantry items, to ensure quality, freshness and consistency.
- Monitor food quality, flavour, portioning, presentation and consistency before dishes are served to customers.
- Coordinate kitchen workflow during service, including preparation schedules, cooking priorities, plating standards and timely communication with front-of-house staff.
- Estimate food and labour requirements based on bookings, customer demand, menu requirements and restaurant service needs.
- Assist with ordering, stock rotation, inventory control and minimising food wastage while maintaining sufficient supplies for restaurant operations.
- Check the quality of raw and cooked food products to ensure they meet the restaurant’s standards and food safety requirements.
- Maintain and enforce food hygiene, workplace health and safety and kitchen sanitation standards in accordance with applicable regulations and business procedures.
- Assist with training and guiding kitchen staff, including cooks, kitchen hands and junior staff, in food preparation, cooking methods, hygiene practices and service standards.
- Operate and maintain commercial kitchen equipment and specialised yakiniku-related preparation equipment in a safe and efficient manner.
- Work with management to improve menu performance, kitchen efficiency, ingredient use and customer satisfaction.
- Contribute to the ongoing development of kitchen procedures, recipes, preparation methods and quality control systems for the restaurant.
Skills and experience required :
- Certificate IV in Commercial Cookery, Diploma of Hospitality Management, or another relevant qualification is preferred. Applicants with substantial relevant industry experience may also be considered.
- At least 1 year of full-time relevant experience as a Chef or in a closely related commercial kitchen role, or equivalent part-time experience.
- Experience in Japanese cuisine, yakiniku, grill cooking or Asian restaurant operations will be highly regarded.
- Strong knowledge of food preparation, cooking methods, food hygiene and kitchen safety standards.
- Ability to work in a fast-paced formal dine-in restaurant environment, including evenings, weekends and public holidays as required.
- Good organisational skills and the ability to coordinate kitchen workflow during busy service periods.
- Ability to work as part of a team and communicate effectively with kitchen and front-of-house staff.

What we offer :
- Permanent full-time employment with 38 ordinary hours per week.
- Annual salary of AUD $80,000 to AUD $85,000 plus superannuation, depending on skills and experience.
