Sage Yellowfin is a contemporary Australian restaurant located in South Bank, Brisbane, specialising in premium seafood, quality steaks, and seasonal local produce.
Key Responsibilities
- Prepare and cook Modern Australian dishes in accordance with Sage Yellowfin recipes, specifications and presentation standards.
- Work across seafood, grill and hot sections, including the preparation and cooking of fresh seafood, steaks, pasta and other menu items.
- Handle and prepare premium seafood products including oysters, prawns, scallops, Moreton Bay bugs, octopus and salmon.
- Operate grills and other commercial kitchen equipment safely and efficiently during service.
- Maintain consistent food quality, flavour, presentation and portion control across all dishes.
- Complete daily mise en place and ensure assigned sections are fully prepared for lunch and dinner service.
- Maintain high standards of food safety, hygiene, cleanliness and safe food-handling practices.
- Monitor stock levels, rotate ingredients correctly, minimise wastage and assist with inventory control.
- Work efficiently under pressure during high-volume service periods while maintaining menu consistency.
- Coordinate with other chefs, kitchen staff and front-of-house team members to ensure timely and smooth service.
- Assist with receiving, checking and correctly storing fresh produce, seafood and other kitchen supplies.
- Maintain a clean, organised and service-ready workstation throughout each shift.
Essential Requirements
- Minimum 1 - 2 years' experience as a Chef in a busy commercial kitchen
- Relevant Certificate IV in Commercial Cookery and Diploma of Hospitality or equivalent qualification preferred
- Knowledge of food safety and HACCP principles
- Ability to work efficiently in a fast-paced environment
- Strong teamwork and communication skills
- Availability to work evenings, weekends, and public holidays
