We are looking for a new legend, leader, culture king - Restaurant Manager to help guide, train, and embrace our team and take them, and us to new levels.
Snapper Rocks, located in the beautiful Darwin Waterfront precinct is a nationally recognised restaurant, with a casual and relaxed, yet premium beach bar atmosphere, with a focus on social dining that offers a diverse range of cocktails, alongside globally influenced Modern Australian cuisine.
Oh, we also mess around with distilling as well with Northern Distilling.

The venue itself has been lucky enough to be pretty highly awarded, which is nice, but realistically we do it for our amazing guests who are with us everyday. They are our reason for being.
We focus on showcasing local, ethical produce, focused on our amazing local seafood and native ingredients. Our beverage program again focused on Australia; a tight 60 wine list of 100% Aussie products, a spirit range of around 180 and we have our own highly awarded gins, Northern Distilling.
The person we are looking for is someone who genuinely cares about the customer experience and the importance of their team and training, in creating this customer experience. Culture is critical to us.
Duties include being responsible day to day operations of the store, including the coordination and overseeing of the different areas of the store. Works with other team members (including Head Chef, Sous Chef etc) in the performance of duties as set out below:
· Writing of rosters and shift planning
· Work along-side and supervise all team members of a lower level
· Able to perform & delegate all key duties of other positions
· On call for any emergencies and any unexpected store or staffing requirements
· Accurately record sales and banking
· Investigate, explain & report on any discrepancies to the General Manager
· Recruits, inducts, trains & exits efficient and friendly employees in conjunction with the General Manager
· Control COG’s expenditures through the development and use of effective par levels
· Control COE expenditures through effective rostering and running of shifts
· Maintain stock control through recording & monitoring wastage, accurate monthly stocktakes, effective ordering/receiving and storage procedures
· Negotiate with suppliers in conjunction with the Corporate Office to gain the highest quality products at the best prices possible
· Training and ongoing development of all team members
· Enforce daily and weekly systems and procedures to ensure a high level of presentation, hygiene, service, product quality and security
· Effectively discipline and praise staff as required
· Perform administrative duties in conjunction with the General Manager (i.e. collecting invoices, recording of food safety requirements)
· Ensure all menu items are available throughout the entire trading day
· Ensure the cleanliness of the store is in alignment with Food Safety
· Ensure all ISP’s are displayed and staff are informed
Qualifications (current and to be maintained by employee)
· First Aid Certificate (preferred)
· Responsible Service of Alcohol Certificate
· Leadership & Management Certificate/Diploma (preferred but not essential)
Knowledge
· High level of literacy and numeracy
· Demonstrated knowledge of policies and procedures
· Detailed and up to date knowledge of preparation and presentation of all menu items including both food and beverage
· Detailed knowledge of all store operations
· Knowledge of workplace health & safety regulations and relevant industrial relation regulations
Attitude
· Pro-active, positive, enthusiastic, energetic, responsible and friendly
· Professional business attitude
· Provide positive, constructive feedback for Staff and Seniors

The role is full time after seeing out the probation period and has a salary range of $80,000 - $95,000, and yes, for the right person, we are happy to sponsor after completing their indication period.
