About the Role
We are seeking an experienced Butcher to join our meat preparation and production team.
The role is responsible for preparing, cutting and processing meat products for sale or supply,
operating meat-processing equipment, producing prepared and smallgoods products, and
maintaining appropriate quality, hygiene and food-safety standards.
Key Responsibilities
Select and inspect meat products to ensure appropriate quality, freshness and suitability for processing.
Cut, trim, bone and portion meat into required cuts and sizes for retail sale or customer orders.
Mince, grind and tenderise meat using appropriate meat-processing machinery and equipment.
Prepare value-added meat products by seasoning, marinating, crumb-coating or otherwise preparing different cuts of meat.
Select and prepare meat and ingredients for the production of sausages and other smallgoods.
Operate meat-processing equipment such as slicers, grinders, mincers, mixers and sausage-filling machines.
Weigh, package, label and arrange prepared meat products for sale or supply.
Monitor product quality, portion sizes and preparation standards throughout the production process.
Maintain knives, machinery, benches, cool-room areas and other equipment in clean and safe working condition.
Follow food-safety, hygiene, temperature-control and workplace health and safety procedures.
Qualifications and Experience
Relevant qualification in Meat Processing, Butchery or a related trade field.
Previous experience working as a Butcher, Smallgoods Maker or in a similar meat-processing role.
Experience cutting, trimming, boning and portioning different types of meat.
Experience operating meat-processing machinery and equipment.
Knowledge of meat quality, storage, food hygiene and safe handling requirements.
Skills
Strong knife-handling and meat-cutting skills.
Ability to identify and prepare different meat cuts accurately.
Knowledge of meat-processing and smallgoods production techniques.
Strong attention to product quality, portion control and presentation.
Ability to operate meat-processing equipment safely.
Good understanding of food hygiene and workplace safety requirements
Pay: $79,000.00 – $80,000.00 per year
Work Location: In person
