About Soi Fire
Soi Fire is a brand-new fire-led Thai fusion kitchen opening in Potts Point in late August 2026. We cook bold, smoky, live-fire food that blends the punch of Thai flavour with the primal craft of open-flame cooking. We’re looking for a Sous Chef / Grill to run our fire, lead the line, and help shape a kitchen from the ground up.
Key Responsibilities
- Running the grill and fire station — charcoal, wood, smoke, the works
- Leading service alongside the Head Chef and stepping up in their absence
- Managing prep flow, section setup, and quality on the pass
- Mentoring junior chefs and keeping standards tight
- Contributing to menu development, specials, and R&D from day one
- Ordering, stock control, and kitchen compliance (food safety, HACCP, cleanliness)
About You
- Solid experience on grill / live-fire cooking (asador, yakitori, robata, wood-fired backgrounds all welcome)
- Genuine interest in Thai flavour — you don’t have to be Thai-trained, but you need to respect and understand the cuisine
- Calm under pressure, sharp on the pass, and a natural leader on the line
- A palate you can trust and the humility to keep learning
- Full Australian working rights — no visa sponsorship available
Hours & Roster
- Wednesday – Saturday: from 3pm
- Sunday: from 11am (trading 12pm – 8:30pm)
- 38 – 44 hours per week
- Two consecutive days off every week (Monday & Tuesday)
