We are seeking a Production Lead - Catering to join our Malaga Catering team .
Based at our central production kitchen, this role supports the effective daily operation of the catering production environment, ensuring meals are produced safely, consistently and to agreed quality, food safety and service standards.
Working closely with the Catering Production Manager, the successful candidate will provide hands-on leadership across the production floor, support Chefs and Catering Assistants, coordinate daily workflow, assist with meal preparation, monitor production standards, and help ensure meals are packed, labelled and dispatched accurately.
This is a practical leadership role suited to someone with strong commercial kitchen or large-scale catering experience who enjoys supporting teams, solving operational issues, and maintaining high standards in a busy production environment.
This is a permanent full-time role and the successful candidate will work 76 hours per fortnight. Usual work hours are Monday to Friday, generally between 8am-4pm, with flexibility required to meet production and operational requirements, including leave coverage where required.
Key responsibilities include:
- Coordinating daily production workflow and task allocation
- Providing hands-on cooking and production support when required
- Supporting Chefs and Catering Assistants to meet production requirements
- Ensuring recipes, portioning, labelling, packing and dispatch processes are followed accurately
- Supporting HACCP, FSANZ, hygiene, allergen and temperature-control requirements
- Assisting with menu trials, recipe implementation and product changes
- Supporting stock control, ordering, FIFO and waste minimization
- Reporting maintenance issues, risks and operational concerns
- Coaching and supporting staff to maintain safe and consistent work practices
Acting as the delegated operational lead during periods of leave or absence, as required

To be suitable for this role, you must possess:
- Relevant qualification in food production, commercial cookery, or related field - desirable
- Experience in a commercial kitchen, production kitchen, aged care, healthcare, or large-scale catering environment
- Previous experience leading a team in a high-volume catering service, with the ability to effectively lead and motivate a team
- Strong understanding of food safety, HACCP and safe food handling requirements
- Ability to lead, support and coordinate kitchen staff in a busy operational setting
- Strong communication and problem-solving skills
- Ability to work under pressure while maintaining quality, safety and consistency
- A practical, hands-on leadership style and commitment to continuous improvement
- A satisfactory National Police Clearance that is less than one year old
