The Gourmet Sausage Company is seeking a skilled and passionate Sausage Maker to join our production team in Arndell Park, NSW. As a Sausage Maker, you will be responsible for preparing, mixing, and producing our signature sausage products to the highest standards, ensuring consistency in flavour, texture and presentation. This role is essential to maintaining our reputation for excellence in the artisanal meat trade and meeting the demands of our growing customer base.
Key responsibilities
- Prepare and process meat using industry-standard equipment, mincers, mixers and filling machines
- Blend spices, herbs, seasonings and other ingredients according to established recipes to create distinctive sausage flavours
- Monitor production processes to maintain food safety and hygiene standards at all times
- Package finished sausages appropriately, labelling products with correct information and dates
- Maintain detailed records of production batches, ingredients used and quality checks
- Clean and sanitise all equipment and work areas in accordance with food safety regulations
- Collaborate with the team to meet daily production targets and deadlines
- Assist with inventory management of raw materials and packaging supplies
- Support innovation and testing of new sausage varieties as requested
What we're looking for
- Proven experience as a sausage maker or butcher with a solid understanding of meat processing techniques
- Knowledge of food safety and hygiene practices, including HACCP principles and Australian food safety legislation
- Proficiency in operating sausage-making equipment and machinery
- Ability to work efficiently in a fast-paced production environment whilst maintaining high quality standards
- Strong attention to detail and commitment to product consistency
- Physical stamina and capability to perform repetitive tasks and lift heavy items regularly
- Reliability and punctuality, with flexibility to work assigned shift patterns
- Excellent teamwork and communication skills
- A passion for quality food production and continuous improvement
- Relevant food handling certification or willingness to obtain it (advantageous)
- Experience in recipe development or flavour creation (advantageous)
