Duties/Responsibilities:
- Selecting and inspecting meats and other ingredients to ensure quality, freshness, and suitability for smoking and grilling.
- Monitoring and regulating temperatures of smokers, BBQ pits, grills, ovens, and other cooking equipment to maintain consistent cooking standards.
- Preparing, seasoning, smoking, grilling, and cooking a variety of BBQ meats and menu items in accordance with restaurant recipes and standards.
- Applying rubs, marinades, sauces, and seasonings during preparation and cooking to achieve desired flavours and presentation.
- Carving, portioning, plating, and garnishing BBQ dishes, ensuring consistency in portion sizes and presentation.
- Safely storing meats, ingredients, and prepared foods in temperature-controlled facilities in accordance with food safety and hygiene requirements.
- Preparing menu items to meet special dietary requirements and customer preferences where required.
- Assisting with menu planning, estimating stock and ingredient requirements, and minimising food waste.
- Maintaining cleanliness and operational standards of smoking, grilling, and food preparation areas.
- Monitoring cooking times and product quality to ensure all BBQ meats are cooked to specification and served at peak quality.
- Managing wood, charcoal, and fuel supplies required for smoking and BBQ operations.
Qualification/Experience:
- AQF Certificate III or AQF Certificate IV (ANZSCO Skill Level 3)
- 12 months relevant experience
Pay: $79,000.00 – $85,000.00 per year
