About the role
This is a full-time, ongoing foundational Sous Chef position supporting the Head Chef in establishing Cherry Australia’s new Japanese dining experience in Melbourne CBD, scheduled to open in 2027. The successful candidate will initially work between our Head Office and our JA2 restaurant to assist with menu development, testing and operational planning, then transition into the Sous Chef role at the new Melbourne CBD restaurant upon opening.
You will work hands-on in the JA2 kitchen, supporting the Head Chef to co-develop and standardise menu items, recipes and kitchen systems, and help build and train the future kitchen brigade who will first be trained at JA2 before moving to the new venue.
Key Responsibilities
- Assist the Head Chef to plan and develop Japanese-inspired menus, including seasonal updates, estimating food and labour costs and providing input into pricing decisions.
- Order and receive food supplies as directed, help manage stock levels and liaise with suppliers to maintain quality and cost-effectiveness.
- Prepare and cook food to a high standard, consistently monitoring quality, taste and presentation during prep and service.
- Support the Head Chef to establish and document recipes, portion sizes and plating standards for the new restaurant.
- Help set up kitchen workflows and operating procedures for the new venue, including prep schedules, service lines and food safety systems.
- Supervise and mentor cooks and kitchen hands, as delegated by the Head Chef, ensuring they are trained to the required standard before transitioning to the new CBD restaurant.
- Explain and promote food safety, hygiene and workplace health and safety practices, ensuring compliance with Australian regulations under the direction of the Head Chef.
Skills and Experience required
- Experience as a Sous Chef or Chef in Japanese or premium Asian dining.
- Solid skills in food preparation, cooking and kitchen operations, including cost awareness and stock control.
- Demonstrated ability to supervise, train and support kitchen staff in a busy service environment.
- Good knowledge of food safety, hygiene and compliance requirements in Australia
