and strong community connection. Since opening East Melbourne in 2020 and Bundoora in 2024, we have
developed destination venues known for high-volume service, strong function trade and structured leadership.
We are preparing to open two significant venues on the Mornington Peninsula and are seeking experienced
Restaurant Managers to lead them.
The Role
- Lead high-volume restaurant and function service
- Recruit, build and mentor strong teams
- Manage labour, rostering and cost control
- Oversee booking platforms, POS and operational systems
- Drive service standards and performance
This is a hands-on leadership role requiring confidence, presence and strong decision-making ability.

- Proven experience managing large hospitality venues
- Strong restaurant and function background
- Knowledge of Italian cuisine and service culture
- Strong financial and team leadership capability
- Confident, hands-on leader with high standards
