About the Venue
Pincho Disco is Collingwood’s bold and buzzing Latin American-inspired restaurant and bar. With an electric atmosphere, live entertainment, vibrant share plates, and cocktails that pack a punch, we’re on the hunt for a dynamic and experienced Restaurant Manager to lead our passionate team.
The position
Take ownership of a high-energy, premium venue where creativity, hospitality and commercial smarts meet. You’ll lead service delivery, shape culture, develop talent, and work hands-on to drive growth and profitability.
Key Responsibilities
- Lead, inspire and manage FOH teams to deliver memorable guest experiences
- Set and maintain service standards that reflect Pincho Disco’s energetic brand
- Oversee rostering, reservations, guest flow and daily operational excellence
- Recruit, train, mentor and retain a high-performing team
- Monitor KPIs, guest feedback and implement continuous improvements
- Ensure RSA, OH&S and compliance standards are met
- Contribute to business strategy and profitability through hands-on leadership
What we're looking for
- 2+ years’ experience as a Restaurant Manager or FOH leader in premium, high-volume venues
- Strong communicator and natural people leader with a people-first approach
- Proven ability to recruit, train and retain great teams
- Confident with POS, rostering, stock control and operational systems
- Hospitality qualifications (Certificate IV+) - not a must but always a plus
- Valid RSA
- Commercially literate, comfortable with financials, KPIs and cost control
- Proactive, solutions-focused and passionate about guest experience and sustainability

Pay: $90,000.00 – $110,000.00 per year
