CHEF DE PARTIE:
We are looking for an energetic and seasoned hospitality professional to join our kitchen team. We believe in seasonality and simplicity. Creating food with great seasonal produce in an open kitchen centred around a wood fired grill and offering it up with wine that leans to minimal intervention, lo-fi practices. The kitchen at Old Palm Liquor specialises in cooking and doing a lot of advance prep on open fire. Other preparation methods that harness the best of each season are fermentation & pickling and curing. The menu changes on a rolling basis, using seasonal produce sourced from local farmers and producers with whom we have developed a close working relationship with over the last few years.
Qualifications & experience
- Relevant cookery qualification from a recognised establishment
- At least 5 years experience in kitchens of a high standard
Tasks & responsibilities
- Quality prep for an a la carte menu, that changes regularly
- Responsible for a section in the kitchen
- Keeping the kitchen clean and maintaining a neat workspace
- Plating during service and participation in the smooth flow of service
