About Us
Ho’s Dim Sim is a family-owned Sydney food manufacturer, handcrafting dim sum since 1984. Based in Marrickville, we produce dumplings, buns, spring rolls and yum cha favourites using traditional recipes and locally sourced Australian ingredients. Our products are supplied to leading restaurants, hotels and retailers across Australia. You will be joining a close-knit team that takes pride in what they make and respects one another.
About the Role
We are looking for an experienced Senior Kitchen Production Hand to join our production team in Marrickville. This is a hands-on production role supporting daily production, helping guide the team and ensuring products are made to specification consistently and to the highest standard. This role suits someone with strong Chinese kitchen or dim sum production experience who is ready to step into a leadership position.
What You’ll Do
- Supporting the Production Manager with daily kitchen operations and production planning
- Assisting with production planning and daily prep requirements
- Preparing fillings, doughs and product components according to recipes and specifications
- Supervising and supporting production kitchen hands and team members
- Ensuring dim sum products are made to specification with consistent quality, portioning and presentation
- Monitoring product quality, portioning, consistency and presentation
- Maintaining food safety, hygiene, allergen control and HACCP standards
- Overseeing daily cleaning, sanitation and kitchen organisation
- Supporting stock rotation, ingredient usage and waste control
- Training team members in production methods and kitchen procedures
- Troubleshooting production issues and improving workflow
- Ensuring the kitchen team works safely, efficiently and to standard
Skills & Experience
- Previous experience as a Senior Production Hand, Production Hand, Senior Kitchen Hand, Cook or similar hands-on role
- Experience in Chinese cuisine, dim sum, yum cha or Asian food manufacturing highly regarded
- Strong understanding of food safety, HACCP, allergen control, hygiene and WHS compliance
- Lead, motivate, train and support a small production team with clear communication
- Hands-on, organised and calm under pressure
- Strong attention to detail and product consistency
- Able to follow and maintain recipes, processes and specifications
- NSW Food Safety Supervisor certificate preferred, or willingness to obtain

Requirements
- Available Monday to Friday and occasional Saturdays when required
- Mandarin or Cantonese language skills are advantageous, with basic English communication skills
- Valid right to work in Australia with work rights verified prior to commencement
- Commercial kitchen or food production experience required
