We are seeking an experienced and ambitious Head Barista to lead our coffee and beverage operations. This is a leadership role for someone who takes pride in their craft, thrives under pressure, and wants to help build one of Bondi's leading coffee destinations.
The successful candidate will take ownership of all coffee operations, beverage quality, ordering, training, stock management and coffee innovation while working closely with management to drive growth and consistency.
The Role
As Head Barista, you will be responsible for overseeing all coffee and non-alcoholic beverage operations across the venue.
You will ensure every coffee served meets the highest quality standards while maintaining speed, consistency, and efficiency during busy service periods.
This role requires someone who can confidently manage a high-volume coffee section independently, train and lead junior staff, manage ordering, and stock levels, develop new drinks, and continuously improve our beverage offering.
Key Responsibilities
Coffee Leadership & Quality Control
- Lead all coffee operations across the venue.
- Ensure every coffee meets Volume One quality standards.
- Maintain consistency across all beverages served.
- Dial in espresso daily and monitor extraction quality.
- Train team members on coffee standards and workflow.
- Conduct regular quality checks throughout service.
- Continuously improve coffee procedures and systems.
- Lead by example during peak service periods.
High-Volume Coffee Service
- Confidently manage high-volume services independently.
- Maintain speed without compromising quality.
- Deliver excellent customer service while working under pressure.
- Organise workflow to maximise efficiency.
- Ensure smooth execution during busy weekend services.
- Manage multiple orders and service channels simultaneously.
Beverage Development & Innovation
- Develop and introduce seasonal drinks.
- Create innovative coffee, matcha and specialty beverage offerings.
- Stay ahead of industry trends.
- Work with management on new menu launches.
- Assist in developing signature Volume One beverages.
- Test and refine recipes before implementation.
- Help drive beverage sales and customer engagement.
Inventory & Ordering
- Manage all milk ordering requirements.
- Forecast stock levels based on trading patterns.
- Manage coffee bean inventory and ordering.
- Order syrups, matcha, chocolate, alternative milks, and beverage supplies.
- Conduct regular stocktakes.
- Minimise wastage and stock losses.
- Ensure the venue never runs out of essential products.
- Maintain strong relationships with suppliers.
Equipment Management
- Take ownership of all coffee equipment.
- Ensure espresso machines are maintained to the highest standard.
- Perform daily cleaning and maintenance procedures.
- Identify equipment issues before they become major problems.
- Coordinate servicing and repairs when required.
- Maintain grinders and calibration throughout service.
- Ensure all coffee equipment remains in excellent condition.
Team Management & Training
- Assist with recruitment of baristas.
- Train and onboard new beverage staff.
- Develop training systems and beverage manuals.
- Build strong coffee knowledge across the team.
- Ensure staff understand recipes and service standards.
- Provide ongoing coaching and performance feedback.
- Help create a positive and professional team culture.
Rostering & Staffing Support
- Assist management with coffee staffing requirements.
- Identify peak trading periods and staffing needs.
- Ensure coffee sections are appropriately staffed.
- Provide recommendations regarding labour allocation.
- Support management with workforce planning.
Customer Experience
- Build strong relationships with regular customers.
- Create a welcoming and engaging coffee experience.
- Handle customer feedback professionally.
- Contribute to the community atmosphere that makes Volume One unique.
- Act as an ambassador for the brand.

Essential Experience
You Must Have:
- Minimum 3 years specialty coffee experience.
- Previous experience as a Head Barista or Senior Barista.
- Experience working in high-volume cafés.
- Strong latte art skills.
- Advanced espresso extraction knowledge.
- Experience managing coffee equipment.
- Experience placing orders and managing stock.
- Strong understanding of workflow and service efficiency.
- Excellent communication skills.
- Full Australian working rights.
Highly Desirable
- Specialty coffee certification.
- Experience creating seasonal beverage menus.
- Matcha and specialty beverage experience.
- Experience training and leading teams.
- Experience with Square POS.
- Bondi or Eastern Suburbs hospitality experience.
