Bertas is looking for an experienced Head Chef to lead our kitchen team in Marrickville.
We’re a busy daytime venue focused on sandwiches, baked goods, good coffee and genuinely great hospitality.
We’re looking for someone who is confident taking ownership of the kitchen day-to-day while still being very hands-on during prep and service.
ABOUT THE ROLE
As Head Chef, you’ll be responsible for the overall operation of the Bertas kitchen, including:
- Leading the kitchen team through prep and service
- Managing daily and weekly prep lists
- Maintaining consistency, quality and presentation across the menu
- Managing daily and weekly ordering
- Managing stock levels, rotation and inventory
- Monitoring food costs, margins and wastage
- Maintaining recipe costing sheets and kitchen spreadsheets
- Working with management on menu development and seasonal changes
- Creating and maintaining kitchen systems and procedures
- Training, developing and managing kitchen staff
- Helping build rosters and ensuring staffing levels are appropriate
- Maintaining food safety, cleaning and compliance standards
- Managing supplier relationships and addressing quality or pricing issues
- Identifying opportunities to improve efficiency without compromising quality
This is a working Head Chef position. You’ll be cooking, prepping and working alongside the team - particularly during busy services.
ABOUT YOU
To be successful in this role, you’ll need:
- Previous experience as a Head Chef, Sous Chef or senior kitchen leader in a busy cafe, deli, restaurant or similar operation
- Strong kitchen leadership and people-management skills
- Availability to work Wednesday to Sunday
- Availability to work up to approximately 45 hours per week
- Strong organisational and time-management skills
- Experience with ordering, stock control and inventory management
- A solid understanding of food costing, margins and waste management
- Confidence using spreadsheets, including recipe costing and stock management
- A strong understanding of food safety and kitchen compliance
- The ability to create structure, systems and accountability within a kitchen
- High standards around cleanliness, organisation and consistency
- The ability to stay calm and make calculated decisions during busy services
- Good communication skills and the ability to give clear direction to a team
Most importantly, we’re looking for someone who genuinely takes ownership of their kitchen.
THE ROLE
Bertas is a daytime venue, so this role offers the opportunity to lead a busy kitchen without the late-night hours traditionally associated with hospitality.
The working week is Wednesday to Sunday from anywhere between 5:00am till 4:00pm, with Mondays and Tuesdays off.
We’re looking for someone who wants to become an important part of the business and help us continue improving how the kitchen operates as Bertas grows.
Salary will be negotiated based on experience, starting from $80,000 up to $95,000.
