Calling all Experienced Chefs!
Hikaru Sushi and Japanese Food is seeking a skilled and dedicated Chef to join our dynamic
kitchen team. Located in a vibrant and welcoming setting, our restaurant is known for
delivering high-quality, authentic Japanese cuisine with a modern touch.
In this role, you will work closely to deliver exceptional dining experiences. You will be
responsible for preparing and presenting a wide range of Japanese dishes, ensuring
consistency, quality, and attention to detail in every plate.
As part of our leadership team, you will play a key role in mentoring and supporting junior
kitchen staff, including cooks and kitchen hands, fostering a positive and efficient team
environment. You will also contribute to menu development, assist with stock control and
ordering, and ensure the kitchen operates smoothly during busy service periods.
Responsibilities:
● Managing kitchen and restaurant operations in the absence of the Restaurant
Manager, in coordination with the Sushi Chef, ensuring smooth service delivery.
● Planning and reviewing menus, including estimating food costs and contributing to
pricing strategies to maximise profitability.
● Preparing and cooking a variety of Japanese dishes in accordance with established
recipes and techniques.
● Monitoring the quality of dishes at all stages of preparation and presentation to
ensure consistently high standards.
● Training and supervising kitchen staff, including new employees, and demonstrating
cooking techniques and food preparation procedures.
● Coordinating kitchen operations and communicating effectively with management,
kitchen, and front-of-house staff regarding food preparation and service
requirements.
● Managing stock levels, ordering food supplies from local and interstate suppliers,
and ensuring proper storage and preservation of ingredients.
Ensuring compliance with food safety and hygiene regulations, and enforcing these
standards across all kitchen staff.
● Maintaining accurate records and forwarding invoices and documentation to
management for processing.
● Maintaining a clean, organised, and efficient kitchen environment at all times.
● Identifying operational issues and reporting them promptly to management.
● Keeping skills and knowledge up to date with current industry trends and best
practices.
We’re looking for someone who has:
● Ability to lead a team of people with different backgrounds.
● Ability to communicate effectively with staff, customers, suppliers and different
institutions. Able to effectively present information and respond to questions from
manager, suppliers and other staff.
● Ability to respond under pressure and adjust to demand.
● Outstanding multitasking capability and willingness to work in a highly demanding
position.
● Able to write reports, business correspondence and performance manuals.
Education / Experience
● Certificate IV in Commercial Cookery.
● Must have at least 1-2 years experience.
● Excellent food knowledge and creativity.
● Leadership/supervisory experience.
● Knowledge of purchasing, ordering, receiving, costing and inventory procedures.
