Roccella Italian | Full-Time Position
Roccella Italian is looking for an experienced and hands-on Restaurant Manager to lead our established, high-volume restaurant in East Melbourne, located directly opposite the Fitzroy Gardens.
This role is suited to a genuine hospitality professional who understands busy restaurant operations, leads confidently from the floor and is committed to delivering an excellent experience for both guests and staff.
Lead and manage the restaurant’s daily operations
Supervise, motivate and develop the front-of-house team
Maintain high standards of service, presentation and guest experience
Manage staff rostering, labour costs and operational performance
Coordinate closely with the kitchen and senior management team
Handle customer feedback professionally and resolve issues effectively
Support recruitment, onboarding and ongoing staff training
Maintain compliance with RSA, food safety and workplace requirements
Monitor venue performance and help achieve agreed operational and financial targets
Continually improve systems, service standards and overall profitability
Proven experience as a Restaurant Manager in a busy, high-volume venue
Strong leadership and people-management skills
Confident managing large teams and demanding services
Excellent communication, organisation and problem-solving abilities
Good commercial understanding of wages, costs and restaurant performance
Professional, reliable and calm under pressure
Passionate about hospitality and delivering excellent customer service
Available to work evenings, weekends and public holidays as required
Current RSA certificate
Full Australian working rights
Experience in quality Italian dining, large restaurants or multi-venue hospitality groups will be highly regarded.
