CHEF– FILIPINO CUISINE SPECIALIST Full-Time Position
Location: Dandenong VIC

About the Role
We are seeking an experienced Chef specialising in authentic Filipino cuisine to join our growing team.
This position requires an individual with extensive knowledge of traditional Filipino cooking techniques and the ability to prepare authentic regional dishes while maintaining consistently high standards of quality, presentation and food safety.
The successful applicant will play a key role in preserving the authenticity of Filipino cuisine while contributing to menu development and daily kitchen operations.
Key Responsibilities
- Design and prepare authentic Filipino menus that showcase traditional regional flavours.
- Prepare and cook a wide range of Filipino dishes using traditional cooking methods.
- Produce high-quality signature dishes including (but not limited to):
- Kare-Kare
- Sinigang
- Crispy Pata
- Sisig
- Bulalo
- Bicol Express
- Lechon Kawali
- Pancit varieties
- Adobo
- Laing
- Ensure all dishes are prepared consistently and presented to a high professional standard.
- Estimate food and labour costs and assist in managing kitchen budgets.
- Source and manage authentic Filipino ingredients and suppliers.
- Maintain stock control and minimise food wastage.
- Supervise food preparation and kitchen workflow.
- Train and mentor junior kitchen staff in authentic Filipino cooking techniques.
- Work collaboratively with management and front-of-house staff to deliver excellent customer service.
- Ensure strict compliance with Australian food safety and hygiene regulations.
- Assist with food preservation, storage and preparation of specialty Filipino products where required.
- Travel to and work on site for catering events when there are bookings.
Essential Selection Criteria
Applicants must demonstrate:
- Minimum 2 years' full-time experience (or equivalent) working as a Chef/Cook in a professional kitchen.
- Proven experience or the ability to prepare a broad range of traditional Filipino dishes from scratch using authentic recipes and techniques.
- Strong understanding of Filipino ingredients, flavour profiles, regional cooking styles and food presentation.
- Experience in menu planning, stock control and kitchen operations.
- Excellent organisational and time management skills.
- Ability to work efficiently in a busy commercial kitchen.
- Strong communication and teamwork skills.
- Commitment to maintaining the highest standards of food safety and hygiene.
- Reliable, professional and passionate about authentic Filipino cuisine.
Qualifications
Applicants should hold:
- Certificate IV in Commercial Cookery or higher; or
- Equivalent industry experience recognised in Australia
