Position Title: Chef

Reports to: General Manager. As Chef, you hold sole charge of the kitchen's operation and direct all kitchen staff.
Place of Work: Del Rio Riverside Resort, Chasling Road, Webbs Creek, Wisemans Ferry NSW 2775. This is a regional riverside resort accessed via the Webbs Creek ferry or a single road. The successful applicant must relocate to, or reliably commute to, this location. This role cannot be performed remotely or from a metropolitan base.
Hours of Work: 38 ordinary hours per week, worked on a rotating seven-day roster that includes weekends, public holidays, nights and split shifts, together with reasonable additional hours as required.
Base Salary: AUD $80,000 – $85,000 per annum (base salary, exclusive of superannuation). Superannuation is paid in addition at the statutory rate.
Award Coverage: Hospitality Industry (General) Award 2020. The base salary is paid as an annualised salary that fully absorbs all award entitlements, including penalty rates, overtime and allowances. You will be paid no less than the award would provide for the hours actually worked.
About the Role: Del Rio Riverside Resort is a multi-facility regional resort on the Hawkesbury River offering à la carte dining, functions and events. We are seeking an experienced Chef to take sole charge of our kitchen operation, lead our kitchen brigade, and deliver consistent, high-quality food across restaurant and function service.
Key Duties and Responsibilities:
- Menu planning and cost control — Design, develop and seasonally revise menus for restaurant and function service; estimate food and labour costs; set and manage the food-cost budget; place orders and manage supplier accounts.
- Quality control at every stage — Monitor and sign off the quality of all dishes at every stage of preparation, cooking and presentation, for both à la carte and high-volume function service.
- Kitchen coordination — Liaise with the General Manager, functions staff and front-of-house on menus, dietary and allergen requirements, event requirements and food-preparation issues.
- Technique and instruction — Demonstrate cooking techniques and advise kitchen staff on preparation, cooking procedures and presentation standards.
- Food production — Prepare and cook food across the resort's dining and function outlets, working hands-on at the pass during service.
- Food safety and hygiene — Implement, monitor and enforce food-safety and hygiene requirements under the NSW Food Act 2003 and the Food Standards Code, including HACCP-based procedures and allergen management; maintain the resort's Food Safety Program.
- Staffing — Roster kitchen staff to the labour budget; select, supervise and train kitchen staff and apprentices; manage kitchen team performance.
- Stock and preservation — Manage stock control, ordering, freezing, vacuum-sealing and food preservation, and maintain buffer stock levels appropriate to a location subject to delivery constraints and periodic flood isolation.
Requirements:
- Certificate IV in Commercial Cookery or Certificate IV in Kitchen Management, or an equivalent overseas qualification, or at least three years of relevant experience in substitution.
- At least five years' full-time experience as a chef, including menu development, food costing, ordering, and the supervision and training of kitchen staff. Extensive experience is required because this position holds sole charge of the kitchen without a second-in-command.
- Demonstrated experience running a multi-outlet or high-volume kitchen (restaurant plus functions and events).
- Current NSW Food Safety Supervisor certificate, or the ability to obtain one before commencement.
- Full working rights in Australia.
- Competent English.
