Aalia, part of the prestigious ESCA Group (home to Ito 1 Hat, Nour 1 Hat, Lilymu, Joji, and more), is a 2-Hatted fine dining Middle Eastern restaurant in Sydney. We are seeking an experienced cocktail bartender with a passion for craft cocktails, refined service, and delivering exceptional guest experiences.
About the Role
As a cocktail bartender at Aalia, you will:
- Create and serve high-quality cocktails to match the fine dining experience.

Work under pressure during busy service while maintaining impeccable standards.

Guide guests through the cocktail menu, offering recommendations and creating memorable experiences.

Collaborate closely with the FOH and kitchen teams to ensure seamless service.

Maintain cleanliness, organisation, and stock control behind the bar.
What We’re Looking For
- Minimum 2 years of experience in refined restaurant cocktail bars.

Exceptional knowledge of classic and contemporary cocktails, spirits, and wine service.

Ability to perform consistently under pressure while delivering impeccable service.

Strong communication and teamwork skills in a high-paced, professional environment.
