South Freo Continental is seeking an Experienced Chef or Cook for our dinner service. We are a successful breakfast and brunch cafe by day and a Trattoria by night. Our trattoria offers traditional Southern Italian cuisine.
The candidate must have extensive knowledge of artisan Italian cuisine with particular emphasis on Southern Italian dishes, including but not limited to entrees, main courses, pizza and desserts.
The key responsibilities include but are not limited to:
- Take ownership of all kitchen duties.
- Create and plan a menu and make changes from time to time.
- Create prep lists, order and manage all food stock and kitchen accessories.
- Effective management of food production to minimise waste.
- Awareness of the need to manage all relevant costs, including labour, food and operational expenses.
- Be accountable for adherence to food safety practices and legislation as applied within the Kitchen.
- Responsible for daily setup and pack down of kitchen, in compliance with all procedures.
- Extensive knowledge of cooking equipment and utensils, including maintenance (knowing when something isn't running effectively), cleaning and sanitisation.
- Raise and maintain awareness of and be accountable for compliance with responsible use of all tools and equipment, wearing appropriate uniform and report all accidents, near misses and unsafe work practices/hazards.
- Keep dry store, freezers and cool room tidy and cleaned.
- Schedule BOH rosters and able to manage kitchen staff in in an efficient and effective manner.
- Establish and maintain an environment of respect and co-operation between kitchen and FOH.
- Ensure customers receive their food in a timely manner.
- Able to work unsupervised, able to take direction and provide direction
A bonus trait is if the candidate is able to manage the restaurant when the owner is absent.

The successful candidate will be expected to have at least 5 years of experience in similar cuisine.
