THE ROLES
We are seeking experienced hospitality professionals to join us as Trade Waiters ( Cocktail Bartenders and Section Waiters ). Full-time sponsorship is available for the right candidates who meet the skill requirements, however Australian workers are preferred.
COCKTAIL BARTENDERS ( Trade Waiters )
We are looking for full-time Cocktail Bartenders (contracted 38 hours per week plus reasonable additional hours). We've launched an exciting new cocktail list and are looking for expertise behind the bar and in the venue to drive it forward.
Key Requirements:
- Minimum 1–2 years of relevant experience in a fast-paced cocktail bar or premium restaurant environment.
- Comprehensive knowledge of classic cocktails, modern mixology techniques, and flavour profiles.
- Strong knowledge of Australian wine, spirits, and craft beer is highly advantageous.
- Self-motivated to manage bar prep (batching, cooking syrups) and maintain bar cleanliness.
- Excellent communication skills with the ability to build rapport with guests sitting at the bar.
- Ability to learn detailed food menus and deliver seamless service to bar guests.
- Valid Victorian RSA (Responsible Service of Alcohol) certificate.
SECTION WAIT STAFF ( Trade Waiters )
We are looking for senior Section Wait Staff for full-time positions ( contracted 38 hours per week plus reasonable additional hours ).
Key Requirements:
- Must have a minimum of 18 months of experience as a section waiter/waitress in a busy, high-volume dining environment.
- Strong time management skills with the ability to confidently navigate a busy section under pressure (including managing out-by times).
- Steak and wine knowledge is a definite advantage, though thorough menu training will be provided.
- A passion for delivering tailored, high-quality customer service and creating a rapport with guests.
- Professional personal presentation paired with an authentic, individual style.
- A proactive, can-do attitude and a strong team player mentality.
- Valid Victorian RSA (Responsible Service of Alcohol) certificate.
