We are seeking a passionate, experienced and hands-on Executive Chef to lead our kitchen teams across Brighton, Mornington and other Le Feu venues as required. This role is ideal for a strong kitchen leader who values consistency, creativity, food safety, team development and operational excellence.
You will be supported by experienced operators and a collaborative leadership team that values teamwork, structure and continuous improvement.
About the Role
As Executive Chef, you will lead and mentor a diverse kitchen team to deliver consistent, high-quality food and exceptional guest experiences. You will be responsible for overseeing daily kitchen operations, staff training, menu development, food safety, cost control and kitchen performance across multiple venues.
This role requires a hands-on leader who can work in the operation, support venue teams, maintain standards and drive continuous improvement.
Key Responsibilities:
- Lead, mentor and supervise chefs, cooks and kitchen hands across multiple venues.
- Maintain consistency, quality and presentation standards across all menu items.
- Plan, develop and improve menus in collaboration with senior leadership.
- Monitor food preparation, cooking, portioning and presentation standards.
- Ensure dishes are nutritious, cost-effective and aligned with Le Feu’s brand standards.
- Train kitchen staff in cooking techniques, preparation procedures and operational systems.
- Manage food safety, hygiene, cleaning and compliance standards.
- Explain and enforce hygiene regulations and safe food handling procedures.
- Work with managers, kitchen staff and front-of-house teams to resolve food preparation and service issues.
- Support wage control, food cost control, stock management and kitchen efficiency.
- Maintain a calm, organised and professional kitchen environment during busy service periods.
- Drive a culture of teamwork, accountability, consistency and continuous improvement.
Skills and Experience
To be successful in this role, you will be an experienced chef and confident kitchen leader with strong organisational skills, excellent time management and a sharp eye for food quality.
The ideal candidate will have:
- Previous experience as a Head Chef or Executive Chef in a high-volume, fast-paced restaurant environment.
- Proven experience leading, training and supervising kitchen teams.
- Strong knowledge of food safety, hygiene and kitchen compliance requirements.
- Experience managing food quality, stock control, labour efficiency and cost control.
- Strong leadership skills with a hands-on approach to problem solving.
- Excellent communication skills and the ability to work across multiple teams and venues.
- High attention to detail in food preparation, presentation and kitchen organisation.
- Ability to work calmly and effectively under pressure.
- A collaborative attitude and genuine passion for good food and guest experience.
- Fluency in English. Vietnamese and/or Chinese language skills are highly regarded.
Qualifications & experience
- Candidates who have prior experience as a Chef in a comparable restaurant with proven experience leading kitchen staff are invited to apply.
- Minimum 2 years’ experience as a Chef in high-volume, fast-paced kitchens in a similar setting to us preferred;
- Previous experience running multifaceted site operation preferred;
- Knowledgeable across all dining periods including breakfast, lunch and dinner as well as strong conferencing experience;
- Able to lead a team with a hands-on approach to problem solving; and
- Full working rights in Australia
