Blanca is opening soon, bringing a relaxed European and Mediterranean dining experience to Bayside. From morning coffee and brunch through to afternoon drinks and vibrant evening dining, Blanca is designed to become a neighbourhood favourite.
Our evenings are all about creating an atmosphere. Great food, thoughtful drinks, warm service and a venue that locals genuinely enjoy returning to week after week. Our service style is relaxed yet knowledgeable. We want every guest to feel comfortable while receiving confident, informed recommendations on both food and wine.
We're looking for an experienced Restaurant Manager to lead our evening service and help create one of Bayside's best dining experiences.
The Role
This is a hands-on management position with a primary focus on leading our evening service.
You'll be responsible for ensuring every guest receives exceptional service while leading and developing the front of house team. Working closely alongside the owners, Head Chef and bar team, you'll play a key role in creating the culture, systems and guest experience that define Blanca.
The standard roster is:
- Wednesday to Saturday
- Evening service
- Four nights per week
This role offers an outstanding work-life balance while still providing the opportunity to lead a premium hospitality team.
For applicants looking for additional hours or a full-time position, we're happy to tailor the role for the right person. This may include daytime management shifts, administration, events, staff training, marketing support, or completing a full-time roster across the four working days.
We're flexible and far more interested in finding the right person than fitting everyone into the same template.
Your Responsibilities
- Lead the front of house team throughout evening service.
- Deliver genuine, professional and memorable guest experiences.
- Manage reservations, seating and service flow.
- Recruit, train, mentor and develop front of house staff.
- Work closely with the kitchen and bar to ensure seamless service.
- Maintain exceptional presentation and service standards.
- Handle guest feedback confidently and professionally.
- Assist with rostering, ordering and operational systems.
- Help build a positive, high-performing team culture from day one.
About You
This role is ideal for someone who genuinely enjoys hospitality and understands that the best venues are built through great people, not big egos.
You'll be working alongside experienced owner operators who are actively involved in the business and passionate about creating something special. This is a collaborative environment where ideas are welcomed, communication is valued and everyone's contribution matters.
We're looking for someone who enjoys taking ownership of service while working closely with the owners to continually improve the guest experience.
We're not looking for someone who believes they have all the answers or wants to dictate how things should be done. We're looking for someone who is confident enough to contribute ideas, open-minded enough to listen to others and motivated by building a successful venue together.
The right person will be:
- An experienced Restaurant Manager or Assistant Manager ready to step into a leadership role.
- Passionate about food, wine and genuine hospitality.
- Strong food and wine knowledge with the confidence to guide guests through the menu and make thoughtful recommendations.
- Formal wine education is highly desirable. Preference will be given to applicants with WSET Level 2 or higher, or an equivalent qualification.
- Calm, organised and confident under pressure.
- A natural leader who develops and motivates their team.
- Warm, approachable and highly professional.
- Commercially aware with strong attention to detail.
- Creative, collaborative and easy to work with.
