What You'll Do
- Prepare, cook and present high-quality Chinese dishes while maintaining consistency in taste, quality and presentation.
- Plan and organise daily food preparation and cooking activities to ensure efficient kitchen operations during service.
- Work with management and the kitchen team to develop, review and improve menus, recipes and seasonal specials.
- Monitor food quality throughout preparation and service to ensure dishes meet the restaurant’s quality standards.
- Estimate food requirements, monitor stock levels and assist with ordering ingredients and kitchen supplies.
- Monitor food costs, portion control and stock usage to minimise wastage and maintain cost efficiency.
- Coordinate daily kitchen operations and work collaboratively with the kitchen team to ensure timely preparation and service of meals.
- Allocate and coordinate kitchen duties where required to ensure smooth workflow during busy service periods.
- Demonstrate cooking techniques and provide guidance, instruction and on-the-job training to kitchen hands and junior kitchen staff.
- Monitor the performance of junior kitchen staff and assist in maintaining consistent kitchen standards.
- Ensure ingredients are properly received, stored, labelled and rotated in accordance with food safety requirements.
- Maintain high standards of food safety, hygiene and workplace health and safety, ensuring compliance with Australian regulations.
- Liaise with management and front-of-house staff regarding customer requests, dietary requirements and daily operational needs.
- Assist in developing and implementing efficient kitchen procedures to improve productivity and maintain consistent food quality.
- Maintain a clean, organised and professional kitchen environment at all times.
What You'll Bring
- A minimum Diploma-level qualification in Hospitality Management that includes a commercial cookery pathway or substantial commercial cookery components, or substantial relevant experience working as a Chef in a commercial kitchen.
- A minimum of one to two years of experience working in a fast-paced commercial kitchen environment, preferably in Chinese or Asian cuisine.
- A genuine passion for Chinese cuisine and a strong willingness to learn and develop.
- Good knowledge of different cooking methods and solid knife skills.
- Strong leadership and team management skills, with the ability to train, motivate and support kitchen staff.
- A solid understanding of kitchen operations, including menu planning, inventory control, supplier coordination and cost control.
- Sound knowledge of food safety, hygiene and safe food-handling practices.
- A positive attitude, strong work ethic and the ability to work well within a team.
- The ability to work efficiently in a fast-paced environment while maintaining high standards of quality and consistency.
