Jashan Lounge Indian Restaurant is seeking a full-time cook in Taree, NSW. The ideal candidate will have experience working in an Indian kitchen, strong teamwork and communication skills, and the ability to prepare a variety of Indian cuisines to the high standards required by the Restaurant.
Duties:
- Develop, prep, and execute an authentic Indian menu featuring a variety of vegetarian and non-vegetarian curries, tandoori items, and grilled dishes.
- Operate specialised kitchen equipment, including traditional tandoor ovens, commercial grills, and heavy utensils, ensuring accurate temperature control throughout service.
- Oversee precise food portioning and aesthetic presentation, ensuring all dishes are garnished and dressed to high standards before leaving the pass.
- Manage end-to-end kitchen operations, seamlessly bridging prep time and live service to ensure efficient ticket times.
- Manage, instruct, and train kitchen staff on prep techniques, portion control, and presentation standards.
- Monitor inventory levels, anticipate shortages, and place accurate orders for food supplies and speciality Indian ingredients.
- Inspect all incoming ingredients for absolute freshness and quality, rejecting items that do not meet restaurant standards.
- Ensure all perishable stock is rotated (FIFO) and stored correctly in designated temperature-controlled facilities.
- Maintain strict kitchen cleanliness and food hygiene practices in full compliance with Food Standards Australia New Zealand (FSANZ).
- Regularly inspect work areas, utensils, and heavy machinery for cleanliness, safety, and operational functionality.
Skills and Experience Required
- Minimum of one year of experience working in both Curry and Tandoori sections in an Indian kitchen is required.
- Certificate III or IV in Commercial Cooking is required.
