We are excited to be hiring across the kitchen team at Australian Hotel & Brewery, a cornerstone of the Rouse Hill community offering a unique blend of modern amenities and traditional hospitality. We're looking to fill the following roles:
Sous Chef (Full-time)
Commis Chef (Full-time and Casual)
THE ROLES
Sous Chef - You'll oversee and assist the Head Chef across all kitchen operations, including staffing and training, menu and dish development, maintaining targets and KPIs, managing food preparation, and ensuring every dish leaving the kitchen meets a high standard. You'll also work closely with front of house management and marketing to help grow the business across various platforms, and liaise with our other venue teams.
Commis Chef (Full-time & Casual) - You'll support the kitchen brigade with day-to-day food preparation and service, learning from senior chefs while contributing to a fast-paced, high-volume kitchen. It's a great opportunity to build your skills and grow within a supportive team.
EXPERIENCE
Sous Chef: Minimum 2 years' experience in a similar role (Sous Chef or Junior Sous Chef), with the ability to lead and motivate a kitchen brigade
Commis Chef: Some kitchen experience preferred but not essential — a genuine willingness to learn and a strong work ethic matter most
WHAT YOU WILL BRING

Strong organisational skills with an eye for detail and consistency
The ability to work efficiently as part of a team, especially during busy services
Good knowledge of food safety, hygiene, and kitchen standards
A composed, positive attitude that works easily with others
(Sous Chef specific) Strong leadership and communication skills, with the ability to train and motivate a team, plus solid knowledge of cost control, stock management, and menu planning
