Head Chef – Bonnie Doon Public House
Bonnie Doon Public House is looking for an experienced Head Chef to lead our kitchen team, working 38 hours per week, with an immediate start.
About Us
Bonnie Doon Public House is a modern Australian pub in Fortitude Valley, celebrating comfort food, nostalgia, and honest cooking done well. Our menu is inspired by classic Aussie flavours — elevated pub food, seasonal produce, and dishes that feel familiar but refined. We're all about warmth, consistency, and creating a place locals genuinely love.
What You'll Do
- Take full ownership of kitchen operations, service standards, and day-to-day running of the section
- Lead, roster, and develop the kitchen team, including training and mentoring junior chefs
- Drive menu development alongside ownership — costing dishes, testing recipes, and refining the offering seasonally
- Manage food cost, GP targets, ordering, and supplier relationships
- Set and enforce food safety, hygiene, and compliance standards (HACCP, Food Act 2006)
- Oversee stock control, prep schedules, and waste minimisation across the kitchen
- Maintain consistency, quality, and presentation across every service
- Work closely with FOH and management to align kitchen output with the venue's broader goals
- Handle kitchen labour costs and rostering within budget
Who You Are
- A current Head Chef, or an experienced Sous Chef ready to run your own kitchen
- Proven experience managing a team in a fast-paced, service-driven pub or restaurant kitchen
- Strong understanding of food costing, GP management, and stock control
- Confident with menu development — from concept through to costed, executable dish
- Solid working knowledge of food safety and compliance requirements
- Passionate about modern Australian / pub-style food done properly
- A natural leader — calm under pressure, organised, and able to bring a team with you
- A strong communicator who works well across BOH and FOH
- Takes pride in consistency, ownership, and great food
What We Offer
- 38hrs full time
- Competitive salary, based on experience
- Autonomy to shape the menu and kitchen culture
- A supportive, down-to-earth team and positive kitchen culture
- A venue with a clear identity and loyal local following
- Genuine opportunity to grow with the business as it expands
