Chiosco by Ormeggio is one of Sydney’s most unique waterfront dining destinations — a relaxed, barefoot-friendly Italian trattoria sitting directly on the water at d’Albora Marina, Mosman.
Part of Maestro Hospitality, the group behind Ormeggio at the Spit and some of Sydney’s most recognised Italian restaurants, Chiosco combines genuine Italian hospitality with an energetic, approachable style of service. From our bustling restaurant and takeaway kiosk to catering for guests arriving by boat, no two services are quite the same.
We are now looking for an experienced and ambitious Assistant Restaurant Manager to join our leadership team.
This is an opportunity for someone who loves being on the floor, developing people and creating memorable guest experiences — while building their management career within an established and growing hospitality group.
About the Role
Working closely with the Restaurant Manager, you will be an integral part of Chiosco’s day-to-day leadership team.
You’ll lead from the floor, support the development of our FOH team and help ensure every service delivers the relaxed but polished hospitality Chiosco is known for.
Your responsibilities will include:

Supporting the Restaurant Manager with the daily operation of the venue
- Leading and supervising the FOH team during service
- Training, coaching and developing team members
- Maintaining high standards of guest service and presentation
- Managing reservations, table flow and guest experience
- Assisting with rostering, labour management and operational cost controls
- Completing daily operational and financial reporting
- Supporting beverage, food and service training
- Maintaining strong communication between FOH, BOH and management
- Leading by example and creating a positive, professional team culture
What We’re Looking For
You are a confident hospitality professional who genuinely enjoys service and wants to continue developing as a leader.
Ideally, you will bring:

Previous supervisory or management experience within a busy restaurant environment
- Experience within Italian restaurants or strong knowledge and appreciation of Italian cuisine
- Strong food and wine knowledge
- A current NSW RSA
- Full Australian working rights
- Fluent spoken and written English
- Strong understanding of hospitality cost control and commercial performance
- Confidence with daily operational and financial reporting
- Excellent communication, organisation and delegation skills
- Strong attention to detail and personal presentation
- The ability to remain calm and organised during busy services
- A genuine ability to recognise and build relationships with returning guests
- A positive, hands-on approach to leadership
- Availability across a flexible hospitality roster including weekends and public holidays
Knowledge of the Italian language is welcomed but is not essential.
Experience with SevenRooms or another restaurant reservation platform, along with formal hospitality qualifications, would also be highly regarded.
