Head Chef – Peppina, Hobart
Peppina, the signature restaurant at The Tasman in Hobart, is shaped by Tasmania’s produce, seasons, and community. Italian in spirit and local in expression, it is generous, energetic, and grounded in provenance.
The Culinary Team works closely with an established network of producers, with access to exceptional ingredients that define the seasonal menu. The culinary direction is well-established, under the guidance of Culinary Director Massimo Mele.

This unique opportunity has arisen through internal progression, offering the chance to step into a highly regarded kitchen and lead an established, capable team into its next chapter.
We are seeking an experienced and passionate Head Chef to deliver operational excellence while continuing to elevate Peppina’s culinary reputation. Your focus will be consistency, leadership and execution - maintaining standards while continuing to refine the offering.
You’ll work closely with an established network of Tasmanian producers, delivering a Peppina menu that continues to reflect seasonality, provenance and place.
The Role
This is a hands-on leadership role that blends operational discipline with culinary inspiration. You will be responsible for:
- Leading and developing a high-performing kitchen team
- Driving consistency, quality, and excellence across every service
- Managing rosters, productivity, and labour costs
- Overseeing ordering, stock control, and food cost management
- Upholding and enhancing Peppina’s culinary standards and guest experience
Above all, you will set the tone in the kitchen—coaching, mentoring, and inspiring your team while maintaining control over quality and delivery.

You are a seasoned Head Chef (or strong Senior Sous ready to step up) who thrives in premium, high-volume environments. You bring:
- Proven leadership experience in high-end restaurants or hotels
