About the Role
SG Foodservice Pty Ltd trading as The Restaurant Pendolino has a position available for a casual Sommelier. The Sommelier role plays an integral part in enhancing the guest experience by delivering exceptional wine and beverage service in ensuring that each pairing perfectly complements the dishes in our Italian fine-dining menu. The working hours will be primarily across Monday to Saturday. The salary is $76,902 plus superannuation.
Pendolino is a fine-dining Italian restaurant known for its handmade pasta and curated Italian/Australian wine list.
Key Responsibilities
- Guide guests through the wine list and menu, offering expert pairing recommendations for Pendolino's Italian cuisine
- Open, pour, and decant wine with proper technique and presentation
- Manage the cellar: stock rotation, inventory, ordering, and storage
- Maintain and update the wine list in consultation with the Executive Chef and senior wine team
- Train front-of-house staff on wine knowledge and pairing principles
- Support general FOH duties: greeting guests, taking orders, table service, POS/payment handling, and table resets
- Ensure RSA compliance and contribute to beverage sales targets
- Assist with wine cost control and inventory management
Requirements
Candidates must meet one of the following:
- AQF Certificate III in Hospitality (or equivalent) + 12 months' relevant experience, or
- 18+ months' relevant experience in Australia, or
- 2+ years' experience in a similar role in fine dining
Plus:
- Strong knowledge of Italian and Australian wines
- Excellent communication, organizational, and mentoring skills
- A polished, guest-focused approach suited to a high-end, fast-paced environment
