Porgies Café is a well-established, high-volume café and restaurant located in Hawthorn, Victoria, renowned for its innovative all-day breakfast and lunch menu, premium coffee, and exceptional customer service. We are seeking an experienced and passionate Chef to lead our kitchen operations and maintain the high culinary standards that our customers expect.
This is a full-time, ongoing position suited to an experienced commercial chef who can work independently, oversee kitchen operations, and consistently deliver high-quality food in a busy à la carte environment.
Key Responsibilities
- Plan menus and assist in developing seasonal menu offerings and daily specials.
- Estimate food and labour costs and assist in controlling kitchen expenditure.
- Order food supplies and monitor inventory to ensure efficient kitchen operations.
- Prepare, cook and present high-quality breakfast, lunch and catering menu items.
- Monitor the quality of dishes throughout all stages of preparation and presentation.
- Coordinate daily kitchen operations to ensure efficient workflow and timely service.
- Demonstrate cooking techniques and provide guidance to kitchen employees.
- Supervise, train and mentor kitchen staff to maintain consistent food quality and productivity.
- Ensure compliance with food safety legislation, HACCP principles, workplace health and safety requirements, and hygiene standards.
- Liaise with management and front-of-house staff regarding menu execution, customer requirements and service operations.
- Maintain high standards of cleanliness, organisation and kitchen efficiency.
Essential Requirements
- Diploma or higher qualification in Hospitality, Commercial Cookery, Kitchen Management or a closely related discipline.
- Minimum five (5) years' full-time experience as a Chef in a commercial restaurant, café or hotel.
- Demonstrated experience preparing high-quality à la carte meals in a fast-paced commercial kitchen.
- Strong knowledge of menu planning, food costing, stock control and kitchen operations.
- Thorough understanding of HACCP, food safety legislation and workplace health and safety requirements.
- Proven ability to supervise, train and coordinate kitchen staff.
- Excellent organisational, communication and time management skills.
- Ability to work independently, remain calm under pressure and consistently deliver high-quality food during busy service periods.
