St. Burgs is seeking an exceptional and highly experienced Cook for our fast-paced kitchen operations. We are looking for a candidate with extensive experience in high-volume restaurants and expert knowledge of Filipino cuisine, particularly Filipino street food, grilled meats, burgers, fried chicken, barbecue, and regional specialties.
Essential requirements (applications that do not meet all criteria will not be considered)
Qualifications and certifications
Certificate IV in Commercial Cookery (mandatory)
Diploma of Hospitality Management (highly preferred)
Food Safety Supervisor Certificate (mandatory)
Current Food Handling Certificate
Valid Australian work rights
First Aid and CPR certification (preferred)
Experience
Minimum of 3 years of experience in commercial kitchens
At least 3 years of experience working in Australia
Minimum of 1 year of specialising in Filipino cuisine and Filipino fusion concepts
Proven experience in restaurants serving 250+ customers per day
Minimum 3 years of experience managing and supervising a kitchen team of 10 or more staff
Demonstrated expertise in regional Filipino cuisine from Pampanga, Ilocos, Bicol, Cebu, Bacolod, Visayas, and Mindanao
Extensive experience in burgers, smash patties, grilled meats, charcoal cooking, marination, fried chicken, barbecue, rice meals, and Filipino comfort food
Experience maintaining food consistency and quality during peak service periods
Skills and knowledge
Expert knowledge of Filipino flavours and regional cooking techniques
Advanced experience in burger preparation, meat handling, seasoning, and grilling techniques
Strong understanding of kitchen workflow optimisation in high-volume environments
Ability to create and innovate menu items inspired by Filipino flavours
Knowledge of stock management, food costing, inventory control, and wastage reduction
Exceptional knife skills and plating standards
Ability to thrive under pressure in a fast-paced kitchen environment
Additional requirements:
Must currently reside in Melbourne, Victoria
Must be available to work evenings, weekends, and public holidays
Must possess reliable transportation and a valid driver’s licence
Ability to stand for extended periods and lift up to 25 kilograms
Fluent in English and Filipino (Tagalog)
Additional Filipino dialects such as Ilocano, Kapampangan, Cebuano, or Hiligaynon are highly regarded
Must successfully complete a practical cooking assessment and reference checks
Preferred candidates will also have
Experience working in burger restaurants or Filipino fast-food establishments
Experience developing recipes that combine Filipino and Western flavours
Experience training junior chefs and maintaining kitchen standards
Strong leadership, organisational, and communication skills
