The Havelock Place is a contemporary restaurant located in a stunning heritage-listed venue in Canterbury. Our food philosophy is centred around bold flavours, refined techniques, and creative expression. Our vision is to blend bold, authentic Sri Lankan flavours with modern cooking techniques to create a truly refined dining experience.
We are particularly interested in chefs with experience in modern Sri Lankan cuisine. A strong understanding of Sri Lankan flavours, spice layering, curry craftsmanship, seafood and premium meat preparation, and refined plating techniques is highly valued. Experience working with bold aromatics, coconut, native spices, seasonal produce, and contemporary interpretations of traditional dishes will be highly regarded. Candidates should be passionate about delivering elevated dining experiences that celebrate Sri Lanka’s rich culinary heritage through a modern lens.
What We’re Looking For
Duties:
- Prepare and cook menu items according to standard recipes and plating guidelines
- Work across grill, larder, and hot sections during service
- Ensure consistent portioning, seasoning, and presentation of dishes
- Assist with daily mise en place and kitchen preparation tasks
- Maintain food safety and hygiene standards in line with HACCP requirements
- Monitor stock levels and assist with ordering and rotation of ingredients
- Support senior chefs during busy service periods
Qualifications
- Certificate III in Commercial Cookery (or equivalent qualification).
- Certificate IV in Kitchen Management (desirable but not essential).
- Food Safety Supervisor Certificate (preferred).
- Current knowledge of food safety and hygiene standards.
Skills & Experience
- Minimum 2–3 years' experience working as a Chef in a busy commercial kitchen.
- Strong knowledge of food preparation, cooking techniques, and kitchen operations.
- Ability to work efficiently in a fast-paced environment.
- Experience with stock control, food costing, and minimising waste.
- Excellent organisational and time management skills.
- Ability to work collaboratively within a team and maintain high-quality standards.
- Full Australian working rights.
