We are looking for an experienced and dynamic Bar Manager/ Asst Manager to lead operations at our busy Bondi venue. This role is hands-on, requiring strong leadership, exceptional customer service skills, and a deep understanding of NSW liquor licensing and Responsible Service of Alcohol (RSA) obligations. You will be responsible for delivering an exceptional bar experience while helping venue manager ensuring smooth operations, inventory, compliance, profitability, and a positive team culture.
Summary of Responsibilities:
1. Operational Management
- Oversee daily bar operations, including venue opening and closing procedures.
- Maintain high standards of cleanliness, hygiene, and service at all times.
- Coordinate with kitchen and floor teams to ensure smooth service flow.
- Implement and maintain standard operating procedures (SOPs) for efficiency and consistency.
- Help venue manage lead the venue effectively, with operational efficiency and FOH management.
2. Staff Leadership & Training
- Recruit, roster, and supervise bartenders, barbacks, and bar supervisors.
- Conduct RSA refresher training and ensure all staff hold current RSA certification.
- Coach and mentor team members to maintain high levels of product knowledge and service.
- Foster a positive, energetic, and inclusive team environment.
3. Stock & Inventory Management
- Manage beverage inventory, including ordering, stock rotation, and storage.
- Conduct weekly stocktakes and reconcile variances.
- Build strong relationships with suppliers and negotiate pricing where possible.
- Control wastage and ensure cost-effective pouring and serving practices.
4. Compliance & Licensing
- Ensure full compliance with NSW liquor licensing laws, including RSA obligations.
- Maintain accurate incident registers, training records, and compliance documentation.
- Liaise with Liquor & Gaming NSW during inspections or licensing matters.
- Monitor patron behaviour and intervene as necessary to prevent breaches.
5. Menu Development & Promotions
- Work with owners and senior bartenders to design seasonal cocktail menus.
- Keep up with trends and introduce innovative drinks to attract customers.
- Plan and execute bar promotions, happy hours, and special events.
- Collaborate with marketing team on social media promotions and local outreach.
6. Financial Accountability
- Monitor daily, weekly, and monthly bar sales and profitability.
- Manage bar budgets, cost of goods (COGS), and wage-to-sales ratios.
- Identify sales trends and adjust strategies to maximise revenue.
- Prepare operational reports for venue management.
7. Health, Safety & Incident Management
- Ensure compliance with WHS regulations and venue safety policies.
- Handle patron incidents professionally, including conflict resolution and first aid (where trained).
- Maintain safe and secure work and customer environments.
Essential Requirements
- Current NSW RSA Competency Card.
- Minimum 3 years’ experience in bar management or senior bar role.
- Strong knowledge of NSW liquor licensing and RSA legislation.
- Proven ability to manage high-volume venues.
- Excellent leadership, communication, and organisational skills.
- Ability to work flexible hours, including nights, weekends, and public holidays.

Pay: $65,000.00 – $75,000.00 per year
