The Venue
Come by for an Amalfi Spritz, Margarita and Tommy's Italian menu of simple, delicious food. There are plenty of antipasti to choose from, including beef tartare, nduja burrata and chicken liver parfait. House-made pasta, pappardelle lamb ragu, truffle lasagna and gnocchi quattro formaggi as well as Tommy’s signature prawn fettuccine to order.
The Role
If you have a passion for great Italian food and love the buzz of a fast-paced restaurant then this could be the role for you. We are looking for someone with the following experience and attributes:
· At least 2 years of full-time work experience in similar position.
· Well presented, professional and calm under pressure, as you would be working in an open kitchen.
· Good work ethic, attitude and communication.
· Able to manage a section.
· Knowledge around Italian cuisine and using a wood-fired oven is a bonus.
· Relevant diploma level required.
Tasks and duties
· Dish Preparation: Chop, prepare, and cook ingredients for a specific menu section.
· Station Management: Set up, organize, and maintain a clean and orderly workstation.
· Quality Control: Ensure all dishes are prepared to a high standard, consistent in taste and appearance, and adhere to portion control.
· Hygiene and Safety: Uphold stringent kitchen hygiene, safety, and health standards, ensuring proper storage and waste disposal.
· Inventory Management: Monitor stock levels of ingredients, report shortages, and manage food waste.
· Supervision: Mentor, train, and guide junior chefs and kitchen hands. Key Tasks
· Food Preparation: This includes tasks like marinating, cutting, chopping, measuring, and weighing ingredients.
· Cooking: Cooking ingredients and assembling dishes according to recipes and the Head Chef's instructions.
· Plating: Arranging food attractively on the plate to enhance customer enjoyment and presentation.
· Cleaning: Thoroughly cleaning the station, equipment, and utensils after each shift.
· Reporting: Informing the Sous Chef or Head Chef about food shortages, damaged equipment, or any other issues affecting operations.
· Collaboration: Working effectively with other station chefs and the wider kitchen team to ensure smooth service.
· Assisting Management: Supporting the Sous Chef and Head Chef in menu development, inventory control, and other administrative tasks as needed.
