**About the venue**
Basil with Thyme is an established cafe at 271 William St in the heart of the legal and finance precinct. We're launching an evening trade — *cafe by day, pizza and wine bar by night* — open Wednesday and Thursday evenings. We're looking for an experienced opening manager to launch it, run it through the ramp, and hand over a trained team.
**The role**
This is a fixed-term launch engagement. You'll set up the evening operation, hire and train the bar and floor team, run Wed/Thu evening service, and hit clear weekly targets — then transition the venue to a permanent manager around week 12.
**What you'll do**
- Set up evening operations: POS, rosters, suppliers, compliance (RSA/FSS)
- Recruit, train and lead a bartender and floor staff
- Run Wed/Thu evening service on the floor (approx. 3pm–7:30pm)
- Own nightly numbers — covers, COGS %, labour %, hourly revenue targets
- Deliver against 30/60/90-day performance gates
**You'll need**
- Proven experience opening or relaunching a licensed venue (50–120 seats)
- Strong bar/wine-bar floor management
- Current RSA and Food Safety Supervisor (or able to obtain immediately)
- Staff hiring and training experience
- Comfort with P&L basics — COGS, labour %, break-even
- POS setup experience
**Nice to have:** Italian/Mediterranean wine knowledge, Melbourne CBD venue experience, marketing/social skills.

Pay: $62,027.28 – $101,195.30 per year
