Mona, Tasmania’s Museum of Old and New Art, is seeking a reliable and experienced Sous Chef to join our kitchen team. While this role is primarily focused on delivering the exceptional, experimental food offerings at Faro Bar + Restaurant, our Sous Chefs work across our diverse and world-class venues to ensure high standards museum-wide.
We take our food pretty seriously here. You might find yourself leading the charge at Faro Bar + Restaurant, or supporting the team in The Source, the Heavy Metal Kitchen, or our busy Wine Bar. In all these spaces, we focus on high-quality local produce and contemporary cuisines that consistently exceed the expectations of our guests.
The Sous Chef role at Mona oversees and supports the successful preparation, production, and operation of our hardworking kitchens. Reporting to the Head Chef and Executive Chef, you will be responsible for producing high-quality food experiences while supervising kitchen staff and service. You'll need to be agile and adaptive in your approach—ready to anchor the team at Faro Bar + Restaurant while remaining open to the broader culinary needs of the site.
- Lead the kitchen team at Faro Bar + Restaurant, working closely with the Head Chef and Executive Chef to maintain the highest food standards;

Supervise and support kitchen operations and teams across various Mona venues as required;

General food preparation, production, service, and delivery;

Assist in training new employees, providing leadership and developing skills across the kitchen brigade;

Provide recommendations and recipes for menu design and development that align with our food ethos;

Lead from the front, assisting diverse kitchen operations and teams in a wide scope of tasks;

Understand and respect Work Health & Safety procedures, championing WHS in all areas;

Ensure food quality and safe food handling/storage procedures are strictly followed;

Manage general administration including stock control, ordering, and supplier liaison;

Maintain flexibility to assist with other ad-hoc functions, venues, and kitchen requests, including offsite events and festivals.
- Significant experience in a high-volume kitchen environment (trade qualification required);

Confident in producing food for a wide range of settings: from the refined service of Faro Bar + Restaurant to canapés, festivals, and casual dining;

Experienced in leading kitchen teams with proven people management skills;
