Nestled within The Lands by Capella precinct in the heart of Sydney CBD, SPEZIA is a 130-seat open-air Italian courtyard restaurant inspired by the rich traditions of Italian hospitality and the ancient spice routes that once influenced its cuisine. Set within a beautifully restored sandstone courtyard, SPEZIA will offer an elevated all-day dining experience from morning espresso and leisurely lunches to aperitivo, dinner and late-night cocktails.
As our Venue Manager, you'll lead the pre-opening journey and play a key role in bringing SPEZIA to life. From building an exceptional team and shaping the guest experience to establishing operational excellence, you'll set the tone for a venue defined by warm hospitality, impeccable service and memorable dining experiences. You will oversee all aspects of the venue's operation, ensuring every detail reflects the standards of a premium hospitality experience.
Key Responsibilities

Lead the successful pre-opening and day-to-day operations of the venue, delivering exceptional guest experiences and operational excellence.
- Recruit, develop, inspire, and lead a high-performing front-of-house team, fostering a culture of collaboration, professionalism and genuine hospitality.
- Drive service standards, ensuring every guest interaction reflects the warmth and sophistication of the SPEZIA brand.
- Oversee private dining and special events, ensuring seamless execution from planning through to delivery.
- Manage financial performance, including budgeting, forecasting, labour, cost control and profitability.
- Build strong relationships with guests, proactively managing feedback and creating memorable experiences.
- Ensure compliance with all health, safety, licensing and operational standards.
About You
We're looking for a hospitality leader who leads by example, thrives in premium dining environments, and is passionate about creating exceptional guest experiences. You'll bring:
- Proven experience as a Venue Manager or operational food & beverage leader within a premium or luxury hospitality venue.
- A genuine passion for food, wine, service and delivering memorable guest experiences.
- Exceptional leadership skills with the ability to inspire, coach and develop high-performing teams.
- Strong commercial acumen, including experience managing P&L, budgets, forecasting, labour and operational performance.
- Excellent communication, relationship-building and stakeholder management skills.
- A proactive, hands-on approach with the ability to think critically, solve problems and remain calm under pressure.
- An innovative mindset with a passion for continuous improvement and bringing fresh ideas to the guest experience.
- International luxury hospitality experience or formal hospitality training will be highly regarded.
- Relevant hospitality qualifications are advantageous but not essential.
- Flexibility to work a rotating roster, including evenings, weekends and public holidays.
- A current Responsible Service of Alcohol (RSA) certification.
