The Role
We’re looking for a Sous Head of Bread to work directly alongside our Head of Bread and help lead the day-to-day running of production.
This is a hands-on leadership role.
You won’t be managing from a distance — you’ll be on the bench, in the mix, leading from the front.
You teach by showing
You coach while working side-by-side with the team
You correct, guide, and lift standards in real time
You constantly inspect the product and push it forward
You’ll be in the trenches with the team, but with the technical skill to improve what we do every single day.
What You’ll Do
Lead production shifts from the bench
Work across mixing, shaping, baking, and finishing
Train and coach bakers in real time, on the floor
Inspect product daily and drive continuous improvement
Build and refine systems that sustain consistency and growth
Step in as primary lead when Head of Bread is off shift
Communicate clearly across morning and night teams
Move across shifts as required to support the operation
This is a role for someone who understands that standards are built daily, not set once.

Primary hours: 10:00am – 4:00pm
Working days: Thursday – Monday
Flexibility required across morning and night shifts when needed

Strong experience in artisan bread production (sourdough essential)
Confident leading from the bench in a fast-paced environment
Deep care for product quality and consistency
Strong technical skills and the ability to coach others
Clear communicator across teams and shifts
Someone who doesn’t believe anything is “not my job”
