Position Description & Title:
Ikkaku Yakiniku is a premium Japanese dining destination in Sunnybank.
To support our continued growth, we are looking for a reliable, long-term Cook / Chef to join our passionate kitchen team. In this role, you will handle premium meat preparation, execute signature Japanese menu items to high culinary standards, and ensure seamless service during peak dining hours.
Key Responsibilities:
- Prepare, portion, and expertly slice premium Wagyu beef and other high-quality proteins according to strict brand standards.
- Cook and present authentic Japanese dishes following established recipes and presentation guidelines.
- Manage specific kitchen prep stations, monitor food quality, and maintain consistent portion control.
- Oversee inventory levels, assist with stock ordering, and manage relationships with local suppliers to minimize wastage.
- Maintain excellent kitchen hygiene, sanitation, and food safety standards.
Skills & Experience Required:
- Qualifications: A relevant trade qualification in Commercial Cookery (Certificate III/IV or equivalent) is highly desirable, or equivalent industry experience.
- Experience: Minimum of 2–3 years of full-time experience in a fast-paced commercial kitchen environment (experience handling premium meats or working within Japanese cuisine is highly regarded).
- Technical Skills: Deep understanding of food safety regulations, and excellent speed and efficiency on the line.
- Attributes: Strong communication skills, exceptional reliability, and the flexibility to work a hospitality roster including weekends and evening shifts.
