About the role
We are seeking a skilled and reliable Butcher / Smallgoods Maker to join our team on a full-time, ongoing basis. Working under the direction of the production supervisor, the successful applicant will prepare, cut, trim and process meat and produce a range of smallgoods in accordance with quality and production requirements. This is a hands-on role involving safe operation of processing equipment, maintaining hygiene standards and ensuring products are prepared consistently to specification. The position offers a stable work schedule with overtime available and is suited to a candidate who takes pride in quality workmanship, food safety and maintaining a clean and safe working environment.
Key duties and responsibilities
- Selects, cuts, trims, prepares and arranges meat for retail sale and supply; operates meat and smallgoods processing machinery; and manages the processes involved in producing smallgoods.
- Prepares meat for sale by deboning, trimming fat, and cutting, mincing and grinding meat to the shape, size and presentation standard required for display or in accordance with customer orders.
- Prepares crumbed cuts, and applies marinades, seasonings and curing processes to specialty cuts.
- Selects and prepares appropriate cuts to produce smallgoods.
- Operates machinery to grind, mix, mince and tenderise meat.
- Prepares seasonings and pickling mixtures by combining spices, salt and other ingredients in the correct proportions.
- Operates sausage-filling equipment, smoking chambers, and cooking kettles and vats.
- Advises retail customers on the selection, suitability and culinary uses of the various cuts stocked.
- Where required, assists with menu planning and scheduling, and contributes to the estimation of food production costs.
Skills and experience required
- An AQF Certificate III including at least two years of on-the-job training, or an AQF Certificate IV in a relevant field; OR at least three (3) years of relevant experience in commercial butchery and meat processing.
- Demonstrated experience in selecting, cutting, trimming, boning and portioning meat products for sale and supply.
- Experience operating meat processing and smallgoods machinery and preparing processed meat products in accordance with production and quality requirements.
- Good understanding of food safety, hygiene, meat handling and safe operation of knives and processing equipment.
- Reliability, attention to detail and the ability to work efficiently as part of a team.
Hours and remuneration
This is a full-time position of approximately 40 ordinary hours per week, with overtime available. The remuneration for the role is $76,000 – $86,000 per annum, exclusive of superannuation, together with compulsory superannuation and any penalty rates, overtime and allowances payable under the Meat Industry Award 2020
