About the Role
As Cellar Manager, you will oversee the day-to-day operation of the Finished Wine Cellar, ensuring wine is prepared efficiently, safely, and to the highest quality standards. You'll lead a dedicated cellar team, drive operational improvements, and ensure production targets are met. You will be responsible for managing all aspects of cellar operations while fostering a positive and safety-focused team culture. You'll play a key role in maintaining product quality, improving operational efficiency, and ensuring compliance with food safety and workplace standards
Your responsibilities will include:

Leading and coordinating the Finished Wine Cellar team, including Cellar Supervisors and Cellar Hands.

Managing all cellar operations to ensure wine quality is maintained throughout the production process.

Identifying and implementing process improvements using lean manufacturing principles.

Overseeing cleaning and sanitation procedures, including filtration and CIP operations.

Developing and maintaining Standard Work Instructions (SWIs), risk assessments, and quality documentation.

Ensuring compliance with HACCP, BRC, ChemWatch, and company quality systems.

Planning weekly rosters and batching schedules in collaboration with the Commercial Winemaker.

Conducting regular team meetings, toolbox talks, and performance reviews.

Coaching, mentoring, and developing employees while promoting a collaborative team environment.

Monitoring wine preparation, filtration, approvals, and additions to ensure products meet bottling specifications.

Working closely with Quality, Laboratory, Production Planning and Maintenance teams to achieve production goals.

Maintaining a strong focus on workplace health and safety, housekeeping, and continuous improvement.

You're comfortable balancing operational priorities while leading continuous improvement initiatives and maintaining high standards across the cellar.
To be successful in this role, you'll bring:

Previous leadership experience within a winery, beverage manufacturing or production environment.

Strong knowledge of cellar operations and wine preparation processes.

Excellent communication and people leadership skills.

A commitment to workplace safety, food safety, and quality systems.

Sound computer skills and the ability to maintain accurate documentation.

A current Forklift Licence.

Confined Space competency (or willingness to obtain).

Flexibility to work weekends and varying hours during busy production periods.

A proactive, reliable, and hands-on approach.
