About the business
Atlas is a cafe and all day dining venue on Hay Street in West Perth, operated by C4R Holdings Pty Ltd. We serve a modern Australian breakfast and lunch menu with strong Asian influences, prepared fresh on site each day, alongside specialty coffee. The venue trades seven days a week and the team is made up of eight people across the kitchen and front of house.
About the role
We are looking for a full time Chef to join our kitchen. The Chef reports to the Head Chef, works alongside a kitchen hand, and is responsible for running the kitchen section through service, preparing our menu to a consistent standard, and leading the kitchen when the Head Chef is not on site. This is an ongoing position, not a casual or seasonal one.
Key responsibilities
● Prepare and cook dishes across our all day breakfast and lunch menu to the standard and presentation set for the venue
● Plan and portion daily preparation so that service runs without gaps through peak trade
● Develop and test new dishes and monthly specials together with the Head Chef, including seasonal changes to the menu
● Cost menu items, monitor portion control and keep food cost within agreed targets
● Order stock, receive deliveries, check quality on arrival and deal with kitchen suppliers
● Monitor stock levels, rotate product and keep wastage to a minimum
● Supervise and train the kitchen hand and any junior kitchen staff in preparation methods and presentation
● Maintain food safety, hygiene and cleaning standards in line with the Food Standards Code, and complete the required records
● Operate and maintain kitchen equipment, and report faults
● Take charge of the kitchen and supervise service in the absence of the Head Chef
Skills and experience required
● A trade qualification in commercial cookery at Certificate III level or above, or an equivalent recognised qualification
● At least two years of paid full time experience working as a chef in a commercial kitchen. Time worked as a kitchen hand or in fast food service does not count towards this
● Demonstrated experience running a high volume breakfast and lunch service, including eggs cooked to order and fast plating turnaround
● Practical experience preparing Asian influenced dishes such as katsu, udon and rice bowls, or a demonstrated ability to cook to a set recipe standard in this style
● Experience with menu costing, portion control and stock ordering
● A current Food Safety Supervisor certificate, or the ability to obtain one before starting
● Ability to supervise and train junior kitchen staff
● Available for early morning starts from 6.00 am and for weekend work on a rotating roster
