We're launching a new Vietnamese takeaway restaurant, opening October–November 2026. We're looking for an experienced Head Chef to establish the kitchen from the ground up—developing the menu, designing the cooking line, establishing operational systems, and building a skilled team. This is a hands-on leadership role for someone who thrives in startup environments.
Key Responsibilities
- Develop authentic Vietnamese takeaway menu inspired by fresh-from-the-wok style (Phở, Bánh Mì, vermicelli bowls)
- Design functional kitchen layout and cooking line setup
- Source local Australian suppliers for all ingredients
- Establish food safety protocols, stock management, and cost control systems
- Recruit, train, and lead kitchen team
- Ensure consistent food quality and customer satisfaction
Essential:
- Minimum 3 years' experience as Head Chef in restaurant or takeaway environment
- Strong knowledge of Vietnamese cuisine (North, Central, or South Vietnamese)
- Experience with kitchen layout design and operational workflow setup
- Leadership experience managing kitchen teams
- Food Safety Supervision or relevant certification
