SOUS CHEF – NEWCASTLE NSW
Surly's Hospitality Pty Ltd is seeking an experienced and motivated Sous Chef to join our team at our newly opened Newcastle venue.
Surly's is a well-established hospitality group known for authentic American BBQ, smoked meats, premium burgers, live music, sport and a strong focus on guest experience. Following the success of our Sydney venue, we are expanding into Newcastle and are seeking a skilled Sous Chef to help lead kitchen operations and support the continued growth of the business.
Salary: $80,000 per annum plus superannuation

Key Responsibilities
- Assist the Head Chef with day-to-day kitchen operations
- Lead kitchen service during trading periods and functions
- Supervise, train and mentor junior kitchen staff
- Ensure food quality, consistency and presentation standards are maintained
- Assist with menu development, specials and seasonal offerings
- Monitor stock levels and assist with ordering and inventory control
- Manage food cost, portion control and minimise wastage
- Ensure compliance with food safety, WHS and kitchen hygiene standards
- Coordinate preparation and service of smoked BBQ meats and American-style menu offerings
- Support rostering and labour management requirements
Skills and Experience
- Minimum three years' experience in a commercial kitchen environment
- At least one year experience in a supervisory or leadership position
- Relevant trade qualification in Commercial Cookery or equivalent
- Strong understanding of kitchen operations, food safety and compliance requirements
- Experience working in high-volume hospitality venues
- Ability to lead and motivate a team in a fast-paced environment
- Strong organisational and communication skills
- Experience with American BBQ, smoked meats or large-format food production will be highly regarded
Essential Requirements
- Certificate III in Commercial Cookery or equivalent qualification
- Availability to work evenings, weekends and public holidays as required
- Strong English communication skills
- Ability to work effectively under pressure
