About the role
ITSI PTY LTD trading as On Fire Charcoal Chicken is seeking a skilled and reliable full-time Cook to join our kitchen at 24/120 Yellowwood Avenue, Harrisdale, Western Australia 6112.
The role is hands-on and primarily involves preparing, cooking, marinating and presenting food in accordance with established recipes, portion standards and food-safety requirements, while supporting efficient service during busy trading periods.
Key duties and responsibilities
- Prepare ingredients and cook a range of menu items, including charcoal chicken, meats, sauces, sides and accompaniments, using established recipes and portion standards.
- Prepare and cook rice in accordance with established recipes, portion requirements and food-safety standards, ensuring consistent texture, quality and serving size.
- Prepare salads and cold accompaniments, including washing, cutting, slicing and portioning vegetables and other ingredients in accordance with recipe and presentation requirements.
- Marinate meats and poultry and prepare ingredients for cooking in accordance with established kitchen procedures.
- Use grills, ovens, fryers, rotisseries and other commercial cooking equipment to prepare food safely, efficiently and to the required level of doneness.
- Inspect ingredients before preparation and ensure food is stored, labelled and rotated correctly to maintain freshness and quality.
- Organise and coordinate food preparation so customer orders are cooked accurately and completed within required service times.
- Follow standard recipes, cooking methods and portion controls to achieve consistent taste, texture, appearance and serving size.
- Check food temperatures and apply safe food-handling practices throughout preparation, cooking, cooling, reheating and service.
- Monitor day-to-day kitchen stock levels, assist with receiving supplies and advise when ingredients and kitchen consumables require replenishment.
- Reduce avoidable food waste through correct preparation methods, portioning, storage and rotation of ingredients.
- Maintain clean and sanitised preparation benches, utensils, cooking equipment and work areas in accordance with hygiene procedures.
- Work closely with other kitchen and service staff to maintain an efficient flow of orders and consistent food quality.
- Prepare food for dine-in, takeaway, delivery and larger-volume orders as required by the business.
- Follow workplace health and safety procedures and report equipment faults, hazards or food-safety issues promptly.
Skills and experience
- Relevant commercial cookery qualification, preferably Certificate III or Certificate IV in Commercial Cookery, or an equivalent qualification and/or relevant industry experience.
- Relevant experience working as a Cook in a commercial restaurant, takeaway or other fast-paced food-service environment.
- Sound knowledge of food preparation, cooking techniques, salad and cold-food preparation, kitchen hygiene, temperature control and safe food handling.
- Ability to prepare and cook food efficiently during busy service periods while maintaining consistent quality and portion standards.
- Ability to follow recipes and kitchen procedures and work effectively as part of a team.
- Availability to work rostered shifts, including evenings, weekends and public holidays where required.
