Soi Fire is Australia's first Thai grill house. We are hiring a Grill CDP — the fire specialist who owns the 2-metre gas char grill and konro finishing station.
The role. You are the fire. Every protein through the grill is yours — skewers, short rib finish, rump cap, pork belly hibachi transfer, chicken maryland, prawn char, fish cake char. You run the grill station across every service and hold peak volume Fri, Sat, and Sun. You report to the Sous Chef and work alongside a full brigade led by the Head Chef.
What you bring. Genuine live-fire experience — a proven season on a busy char grill under peak service. Grill discipline that holds through 30+ plates an hour without dropping quality. Composure at the fire when the pass is calling. Konro or hibachi familiarity is a real plus, not a requirement — training available for the right technician.
You know the difference between fire as decoration and fire as flavour, and you cook to the second one.

Who this role is for. A grill chef with 3–6 years' fire experience who wants to specialise, not diversify. You'll own one of the most significant grill installations in a new Sydney venue, with genuine creative input on grill technique across the menu. Career pathway to Sous within the Soi Group as the business scales.
Trading pattern. Wed–Sat dinner (3pm – 11pm), Sunday continuous (10am – 9:30pm). Closed Monday and Tuesday.
What you receive. Salary above. Superannuation at 12%. Transparent shared tip pool, points-based, weighted for role responsibility. Meals on shift. Direct mentorship from the Sous and Head Chef, with technique input from the Executive Chef.
