Olivera Italian is looking for an experienced and passionate Head Chef to lead our kitchen team at our beautiful waterfront restaurant in Manly, Brisbane.
Olivera is entering an exciting new chapter, with a refreshed menu and a focus on generous Italian food, quality seasonal ingredients and warm, relaxed hospitality.
This is a hands-on leadership position suited to a chef who takes pride in their food, enjoys developing a strong kitchen team and understands the commercial side of running a successful restaurant.
You will work closely with both owners of the business, giving you direct support, clear communication and the opportunity to have a genuine influence on the future direction of Olivera.
About the Role
As Head Chef, you will be responsible for:
- Leading and managing the day-to-day operation of the kitchen
- Maintaining consistently high standards of food quality, presentation and service
- Working with both owners on menu development, seasonal specials and future concepts
- Training, developing and motivating the kitchen team
- Managing kitchen rosters, productivity and labour costs
- Monitoring food costs, portion control, ordering, stock levels and wastage
- Ensuring all food safety, hygiene and workplace procedures are followed
- Creating a positive, organised and professional kitchen culture
- Working collaboratively with the front-of-house management team
- Remaining hands-on and actively participating in service
About You
We are looking for someone who:
- Has proven experience as a Head Chef, Senior Sous Chef or similar kitchen leader
- Has strong experience in Italian or Mediterranean cuisine
- Is confident managing a busy à la carte kitchen
- Has excellent leadership and communication skills
- Understands food costs, wage management, stock control and kitchen profitability
- Can maintain consistency while continuing to improve the menu and operation
- Is calm, organised and solutions-focused during busy services
- Takes ownership of the kitchen and leads by example
- Is reliable, professional and committed to becoming a long-term part of the business
Experience with fresh pasta, seafood or traditional Italian cooking would be highly regarded.
Pay: $85,000.00 – $95,000.00 per year
