Punjabi Brothers Indian Cuisine is seeking a skilled and motivated Chef to join our team at our Kenmore restaurant. Punjabi Brothers is known for serving fresh, authentic and high-quality North Indian cuisine in a warm and welcoming dining environment. With locations in Karalee and Kenmore, we take pride in preparing flavourful Indian dishes using quality ingredients, traditional cooking methods and consistent service standards. Our Kenmore restaurant offers a wide range of Indian favourites, including curries, tandoori dishes, biryanis, naan breads, vegetarian and non-vegetarian specialties, and traditional accompaniments. We are now looking for a Chef who can contribute to our kitchen operations, maintain food quality, and support the continued growth of our restaurant.

Key Responsibilities
- Preparing and cooking a variety of North Indian dishes, including curries, tandoori items, biryanis, starters, breads, sauces and accompaniments in accordance with the restaurant’s recipes and quality standards.
- Ensuring all dishes are prepared with consistency in taste, texture, portion size, presentation and temperature before being served to customers.
- Assisting with menu planning, seasonal menu updates and the development of new dishes that suit customer preferences and the restaurant’s Indian cuisine concept.
- Estimating food preparation requirements, ingredient usage, kitchen labour needs and portion costs to support efficient kitchen operations.
- Ordering, checking and managing food supplies, spices, dry goods, fresh produce, meat, seafood, dairy and other kitchen stock to ensure sufficient availability for daily service.
- Inspecting ingredients and prepared dishes at different stages of preparation to ensure freshness, quality, presentation and compliance with restaurant standards.
- Coordinating with the Restaurant Manager, kitchen team and front-of-house staff regarding food preparation times, customer requirements, menu availability, dietary requests and service issues.
- Demonstrating cooking methods and guiding kitchen staff in Indian cooking techniques, including curry preparation, marination, tandoor cooking, spice balancing, sauce preparation and plating.
- Supervising kitchen workflow during lunch, dinner, takeaway and delivery service to ensure meals are prepared efficiently and within required timeframes.
- Maintaining high standards of food safety, cleanliness and hygiene in all food preparation, cooking, storage and service areas.
- Explaining and enforcing kitchen hygiene procedures, safe food handling practices, equipment cleaning requirements and workplace health and safety standards.
- Training and supporting junior kitchen staff, cooks and kitchen hands in food preparation procedures, portion control, cooking techniques and kitchen routines.
- Assisting with the selection and onboarding of kitchen staff where required, including providing practical guidance on Punjabi Brothers’ kitchen standards.
- Monitoring stock rotation, storage temperatures, labelling and food preservation procedures to minimise wastage and maintain product quality.
- Freezing, storing and preserving suitable food items, sauces, marinades and prepared ingredients in accordance with food safety requirements.
- Managing daily preparation lists and ensuring all ingredients, sauces, gravies, spice mixes and garnishes are ready before service.
- Maintaining kitchen equipment, utensils and cooking areas in a clean, safe and organised condition.
- Supporting the restaurant’s commitment to serving fresh, authentic and high-quality Indian food to customers in the Kenmore community.
Skills and Experience Required
- At least 1 year of relevant experience as a Chef or in a similar commercial kitchen role.
- An AQF Associate Degree, Advanced Diploma or Diploma in Commercial Cookery, Hospitality, Culinary Arts or a related field.
Hours: 38 hours per week - Full-time
Salary: $75,000 to $85,000 plus superannuation per annum
